Raspberry and pistachio Mille-feuilles

Ingredients (for 6 people) :

  • 50g of raspberry coulis
  • 50g pistachio
  • 100g of raspberries
  • 200g of ice cream or raspberry sorbet
  • 200g ice cream with pistachio
  • 2 puff pastry

PREPARATION

STEP 1 :

Cut 18 squares of puff pastry using a cookie cutter and place them on a baking sheet covered with greaseproof paper. Cover the parchment paper set and place a second plate on it so that the dough swells evenly when cooking.

2ND STEP :

Bake for 15 minutes in a preheated oven at 200 ° C and allow to cool.

STEP 3:

Meanwhile, roughly cut the pistachios with a knife.

STEP 4:

On a square of puff pastry, put raspberry sorbet and pistachio chips. Then place over a second layer of dough before disposing ice with pistachio and raspberries. Finally put a last square of dough on top and decorate with raspberries and chips of pistachio. Repeat the operation 6 times to form six thousand.

STEP 5:

Serve with raspberry coulis.
