Ingredients (for 6 person) :
for the pastry:
– 250g of flour
– 125 g butter
– 70 g of sugar
– 2 egg yolks
– 5 ounces of water
– 1 pinch of salt
for the custard:
– 25 cl of milk
– 1 egg
– 30 g flour
– 40 g sugar
– 1 sachet of vanilla sugar
– 500 g strawberries (or more;)
Recipe preparation :
Beat the egg yolks and sugar with a whisk and chill the mixture with a little water.
Mix finger flour and butter cut into small plots to get a sandy consistency and that the butter is absorbed (!!! We must act quickly so that the mixture does not soften too!).
Pour in the middle of this “sand” the liquid mixture.
Stir knife elements quickly without giving their body.
Form a ball with the palms and milling 1 or 2 times to make the ball + homogeneous.
Line a mold of 25 cm in diameter with the dough, garnish the parchment paper and dried beans.
Cook white 20 to 25 min at 180 ° C (gas mark 6).
NB: after the oven down to 120 ° C / 150 ° C for the meringue.
Bring the milk to boil with the chosen flavor (vanilla or other).
Work the egg with the sugar until the dough makes the ribbon, add flour.
Pour the boiling milk over the mixture, turning well.
Return to pot on the fire.
Cook, turning carefully.
